Unetbootin USB persistence not working

What sort of changes are you losing? Any user related sorts of things, like a desktop background should persist, but certain system related things like kernel and even fstab will not (last time I tried). You can update many packges on a persistent media system, but certain things take a regular filesystem.

Did you MD5 test the ISO you downloaded?

I tried to save a simple textfile in /home/ubuntu. It showed as saved when I got out of vi and did a ls. However, upon booting - no trace of it. One thing I did learn is that I am booting into it using UEFI. I bought my PC in 2012 and it run Win7 normally. But when I boot into Ubuntu 12.10, the boot menu shows my USB as UEFI. I think this might be a problem. There is another option for the USB but when I choose the non-UEFI the boot process just hangs and the kernel panics.
