The release note on Thunderbird says it's daily built instead of stable.

Hello there!

When viewing the release note under the `About Thunderbird`, it opens a tab and show that it's on daily built (https://start.thunderbird.net/en-US/daily/?uri=/thunderbird/releasenotes/&locale=en-US&version=78.5.1&channel=release-cck-ubuntu&os=Linux&buildid=20201130232704)

I'm wondering if this is a bug? Or this is because it is packed with Snap?

If you are using the snap version and not the *.deb package from the Ubuntu repositories, then you are wrong here.
