Why do you want to install Ubuntu in VMware? I would have thought that if you need a server at all it should be a dedicated machine.

With email servers there are two basic options you can either rely on all users running a client all the time or have a system where email goes to a central server and users can collect it when they are ready (using IMAP or POP3). You probably want the later. You will find all you need to know in the "Email Services" setion of the server documentation here

https://help.ubuntu.com/12.04/serverguide/index.html

or for the pdf version here

https://help.ubuntu.com/12.04/serverguide/serverguide.pdf

I would never even consider running a server other than as a dedicated machine so I have no idea what the implications are but one thing you would need to be sure of is how IP addresses and port numbers are handled. A server is no good if its port numbers or IP address is changed due to the fact its running on a virtual machinene
