How to create new redmine instance?

Is there a recommended method to create a new redmine instance (like an initialization script), or should I just create a new database, configuration folder and file folder in the appropriate locations?
Is there an automated way to rename the "default" instance?

I don't know if I'm doing it in the right way, but I'm using the command
sudo dpkg-reconfigure redmine
and I add all the instance of redmine separated by space, and after that just answer to debconf question as you need.

I found out that if you run it again you can add instance or remove instance simply by adding instance name or removing instance name from the instance shown by
sudo dpkg-reconfigure redmine

I hope that the team may review my answer, so that we can provide a better understanding of it
