protocol to use

Which protocol should I use in my Pidgin and what is the difference between different protocols? Where could I find any documentation about it?

It depends on who you want to chat with.

If you want to chat with someone connected to MSN, you need to use the MSN protocol (and an MSN account to login).
If you want to chat with someone connected to Yahoo!, you need to use the Yahoo! protocol (and an Yahoo! account to login).

You can have multiple accounts if all your buddies (friends, relatives, coworkers, etc) are not using the same network. Let's say you have your brother connected with Google Talk and your sister is using MSN. You will need the create an account on each of those networks and configure each of them into pidgin.
