How do I do a real 3D (X, Y, Z) plot?

If I browse through the Help? Everything they suggest doing is either missing from the menus or greyed out in the dialog boxes.

But it looks like there are two issues requesting it.

It should either be implemented,
or references to the z-axis should be removed
from the help files and dialog boxes.

At least I didn't waste to much time on this wild goose chase.
