When I minimize a window it closes

I do not know where to go to control this. When I click on the "--" symbol on the upper right side of any window, it does not minimize, it closes.

Right click on your bottom panel, select "Add to Panel", scroll down to find "Window List", click on that and then on "Add". and "Close".

Move the small icon to the left next to the Desktop icon and lock it into position.
