Search for Thunderbird. I'm afraid the desktop environment (GNOME) is heavily dependent on evolution, so AFAICT you can't uninstall evolution without causing problems or e.g. change the calender you get when you click on the clock to come from Thunderbird's lightning extension.

Why...? I never (or better sometimes) use Evolution...
Install Thunderbid and live evolution in place, simply don't use it.
I like a simpler and clear user interface as Thunderbird has.

Please open a Terminal from the menu Applications->Accessories->Terminal and type:

sudo apt-get update
sudo apt-get upgrade
sudo apt-get install mozilla-thunderbird

give your user password when requested, you don't see nothing when you type it, then press enter.
