Nobody claimed that it is a rolling release.
The software is not working anymore, so it has to be fixed.

Where are the Ubuntu developers who claim that they are able and willing to change the evolution source code to work with a complete new Google API , and furthermore are able to do this in a few days (The same few days which would be needed to compile the new sources and have a running version)?

I cite "The evolution developers refused to fix the problem, as the version is outdated."
So, there is no reason to file a bug here, as nobody will fix it, neither in this team nor at the Evolution team.
That is just a waste of time.

Thus, the only option for having a working evolution mail version in Focal is by providing a new version.

Btw, I filed a bug with the original Evolution team, they said: Ask your package maintainer to provide a new version.

I don't understand. This thread seems to be saying that Ubuntu 20.04 has a broken Evolution package but its not going to get fixed ?

Ubuntu 20.04 is supported until when ? Maybe I am using the word 'supported' a little differently than Ubuntu uses it ....

Just a bit of a time line.

15 June 2016 - launch of Google's People API
12 Aug 2020 - last update to googles announcement about closing Contacts API
3rd June 2021 - Patch submitted to Evolution to solve the problem
15th June 2021 - Google's deadline to change over.

Gnome Evolution 3.40.4 and earlier do not work (sorry, thats Bernard's suggestion above)
Gnome Evolution 3.41.1 and later do (apparently) work.

Based on scrolling through the Evolution gitlab pages, maybe some one backported the patch, f19eeea7, to 3.40.4 ? Anyway, U21.10 is not for me, I use Firefox.

You can of course use Debian Sid or Testing (bookworm), pretty dodgy in this part of its life cycle. But it does have Evolution 3.42.0 and a functional Firefox.

To be fair, I do acknowledge that its quite unreasonable to blame Ubuntu developers, Gnome Evolution sat on this for five years, making the change 12 days before Google's deadline.

But the fact is that we, the end users, are the ones with non functioning systems. And we feel a bit let down....

A couple of things, first yes we are getting this for free, so keep that in mind. Second the average user couldn't be asked to just patch a system, and on top of that this is why you are reading this comment probably at 2am considering your life choices.

Open Source is for free, given my profile, you should expect I understand that.

If I have made an incorrect statement in either of my posts here, I would value your specific correction. I mean that seriously.

In terms of end users applying patches, maybe you need to look up "backports" in this context ?

Life choices ? Are you aware that the world has different time zones ? :-)
