I would install desktop and get to know the system. The server cd does not come with a gui by default and is a much smaller install. Once you get more familiar with the system you can maybe use the server system.

You can install the server edition just like the desktop system. Its the same install method. It depends entirely what ou want it to be a server for. There is no black and white answer, there are so many different types of server.

The desktop system can do all the things the server can, just with an x server.
