Is SanDisk Extreme PRO Portable SSD V2 Linux compatible?

If so, is it compatible with FAT32 or EXT4 or both?

Sandisk support claims that they have never tested the drive with Linux!

It's a USB storage so yes. If you are only using it in Linux systems then use Ext4 or another Linux file system. If you want to use it in Windows too then NTFS or exFAT will work OK.
