why have really great and useful features been completely removed from system?

first of all, i love Unity and the way it goes is the right way i think, BUT there are some things that really annoy me regarding the "advanced options"!

for instance i love the option for the Launcher to dodge maximized windows!

i understand that it could have confused some testers but i don't understand why this option is completely removed and not only deactivated by default, please let the "power user" their right to change whatever settings they like - it was possible before and has no negative side-effects so why completeley remove such option??

the way Nautilus goes is another very big fault for me!
i know that Unity still has dependencies on Gnome and the Gnome developers are going their own way, but why not switch to Nemo in that case?
there are so many good and important features that have been completely removed from Nautilus! actually it is not useable anymore!
i.e. the F3 extra-pane is gone, collapse folders with the little arrow, saved folder states and view settings, show the actual folder size in the statusbar, and many more!
for gods sake, why this very useful and handy features have been removed?

the other thing, which is a huge design and consistency flaw is the Gnome menu on all the Gnome apps like:

‣ Nautilus
‣ Evince
‣ Empathy
‣ Rhythmbox
‣ gnome-system-monitor

that is a big joke, why we have the great global menu in the panel if all the menus and submenus now are under one menu-point?
it is very annoying and not very useful!

i would like to get an answer on my questions because i think that i'm not he only one who gets disappointed over these things!

Yeah, I agree with the issues you've raised about appmenus, you can blame GNOME for that. Ubuntu plans to add normal menus back to these apps (by more patching).

wouldn't it be better to fork the Apps or use already forked ones like Nemo for Nautilus?

i found it simply astonishing that i was unable to swap caps and ctrl key, and all the other keyboard options were removed as well.
