In Evolution can I edit the contacts field?

In Evolution Contacts there is the Show: field which is set by default to Any Category.
The categories would be very suitable for a salesman or real estate agent but do not meet my needs. I would like to change some of the categories from Hot Contact or Weather, Partly Cloudy to something more useful. Any suggestions?
