What is better for a Xeon 64 bits server ? server or amd64-xeon kernel ?

If you mean what distribution? I see you linux kernel question but you should use the latest kernel of course and if you have a 64 bit processor than use a 64 bit kernel XEON is an Intel processor.

I don't know how supported XEON processors are in Ubuntu Linux but I know that AMD 64 is supported but I have just checked that Intel XEON is supported also so in my opinion if you would like go with this:

64-bit PC (AMD64) server install CD
    For computers based on the AMD64 or EM64T architecture (e.g., Athlon64, Opteron, EM64T Xeon). It is not necessary for all (even most) processors made by AMD -- only their 64 bit chips.

Note it is not enough to just install a new kernel, a 64 bit kernel because all your software are 32 bit so you need a 64 BIT SEVER CD as I mentioned above because on that CD all the software is ported into 64 bit architecture.

So as far as I know you need a fresh install.

I do understand your point of view and I would like to thank your reply but it wasn't helpul.

I want to know what kernel will provide me a better performance in Ubuntu, in a Xeon server that will be used for NFS sharing. Should I use linux-image-server, a kernel focused in server tasks or linux-amd64-xeon ? Which package will provide me the best perfomance ?

I don't have HW for make the test but i think the server image is your choice. The linux-amd64-xeon is aimed as a desktop kernel with PREEMPT enabled (only usefull for desktop and counterless in a server).
