on or off-line tutorial

i am having extreme difficulty finding any info on how to setup or use the program once it's installed. my wife and i decided to start homeschooling next year so i decided to try to use schooltool to track progress and as a proof to any agency which might inquire of courses taught and how much time etc etc. i've managed to muddle through setting up a school year, students, teacher and some stuff like that but now that it's down to nuts & bolts im lost. a step by step guide even for just one class/course would be extremely helpful.
