separate openerp-web from openerp-server?

Hi,

With v6.1, could I use openerp-web in different server from openerp-server server? I want to separate these 2 services even if they are on the same server.

these are separate servers, connected via TCP connection. If they are on the same host (physical/virtual), use 127.0.0.1, if they are on different physical/virtual host, use the appropriate IP/hostname

Yes, the possibility to embed openerp-web in the server is really that: a possibility. You can still execute it in a stand-alone mode, separated from the server just like it used to be before 6.1.
