Where can I find logs about what gwibber is doing?

gwibber is actually not updating my messages, so I wanted to check the logs... didn't find them.

Where should I search for them?

In Gwibber 2, you can see log messages by manually starting gwibber-daemon from the command line. Make sure that you terminate existing instances of the daemon (gwibber-daemon-shutdown command) before you do this.
